Ingredients
- ½ cup Summer Fresh Five Cheese Dip
- 1 cup Summer Fresh Baba Ghanouj
- ¼ cup butter, softened
- 1 clove garlic, minced
- 1 teaspoon grated lemon zest
- ½ teaspoon ground cumin
- 2 tablespoon turmeric
- ¼ teaspoon salt
- ¼ teaspoon ground black pepper
- 1 large head cauliflower, leaves trimmed
- ½ cup Fresh Parsley, chopped
- ¼ cup Pine Nuts
- ½ cup, Pomegranate Seeds
Directions
Preheat oven to 375 degrees F
Mix butter, garlic, turmeric, lemon zest, cumin, salt, and ground black pepper in a bowl.
Cut cauliflower stem so it can sit upright in a casserole dish. Spread mixture evenly over the top and sides of cauliflower, place in a casserole dish, and cover with foil.
Roast in the preheated oven until tender and cooked through, about 45 minutes and another 30 minutes uncovered. Five Minutes before it’s ready, take cauliflower out of oven and drizzle cauliflower with 5 Cheese Dip and return to oven to finish cooking.
Take a large plate and cover the bottom of it with Baba Ghanouj and transfer cauliflower on top. Spoon liquid from the bottom of the casserole dish over the cauliflower. Sprinkle with fresh parsley, pine nuts and pomegranate seeds and serve.
