Bean Medley Turkey Chili

Ingredients

  • 300g Summer Fresh Five Bean Salad (2 pkgs)
  • 2 Tbsp olive oil
  • 1 clove garlic, minced
  • ½ onion, diced
  • ½ tsp cumin
  • ½ tsp chili powder
  • ¼ tsp cayenne
  • ¼ tsp smoked paprika
  • 8 oz ground turkey
  • 1/2 cup frozen corn
  • 1 cup canned tomatoes diced
  • 4 Tbsp Sour Cream
  • 4 Tbsp Cheddar Cheese

Directions

  1. In a large pot add the olive oil, garlic, onion and cook for 2 minutes on medium heat. Add spices and continue cooking for 1 minute.
  2. Add turkey and tomatoes, and continue cooking for 15-20 minutes.
  3. Add the Summer Fresh Bean salad and continue cooking for 25 minutes.
  4. Serve with a dollop of sour cream, and 2 tbsp of shredded cheddar on top.

Serves 2. Enjoy!
