Couscous Salad with White Fish and Grilled Corn

Ingredients

  •  Summer Fresh Couscous Salad800g
  •  Summer Fresh Tzatziki
  •  1 ripe avocado cut into cubes
  •  ½ cup cherry tomatoes sliced length wise
  •  2 cobs of corn • Fresh Lemon
  •  6-7 oz or two small-medium sized filets of white fish

Directions

To begin wash and lay your fish out onto a paper towel. Sprinkle with sea salt and fresh pepper
2. Pre heat your grill on high and allow it to sit for 5-10 minutes.
3. Place fish into a grill pan and season with fresh lemon juice
4. Once BBQ is hot reduce heat to medium and place fish (in pan covered) onto the grill and close the lid
5. Grill for 7-10 minutes, fish will be white and flaky when done.
6. While fish is cooking shuck corn and boil in a pot of water for 2-3 minutes finishing off on the grill for an additional 2 minutes rotating corn half way through
7. Cut corn of the cob with a sharp knife
8. Prepare cherry tomatoes and avocado
9. To make your Tzatziki drizzle combine 3 tablespoons of Summer Fresh Tzatziki with 1 tablespoon of fresh lemon juice or until it’s a pourable consistency.
To prepare your salad, start with a base of Summer Fresh Couscous Salad combine with fresh cherry tomatoes, avocado, grilled corn and top with your grilled fish, Summer Fresh Tzatziki drizzle and fresh lemon slices.
