Start the New Year with Summer Fresh!

Meal Prepping is ESSENTIAL for getting you back into a routine after the winter holiday.
Below we have Summer Fresh BREAKFAST, LUNCH and DINNER recipes as well as snacking options to get you set for a great meal-prepping plan. Who else is excited?

 A bowl filled with Quinia, Avocado, Onions, Sweet Potatoes, Cherry Tomatoes and Egg.

Breakfast Buddha Bowl

Ingredients

3 x Summer Fresh Roasted Red Pepper Hummus (227g)

5 cups or 5 large handfuls of spinach or kale

3 cup cooked tri-coloured quinoa

4 ripe avocado

4 small sweet potato sliced into rounds

1½ red onion sliced

5 hard-boiled eggs

3 cup sliced cherry tomatoes

4 tbsp olive oil

Sea salt and pepper

Instructions

1. Preheat oven to 400º F.

2. Slice sweet potatoes into thin rounds, brush with olive oil and add salt & pepper

3. Arrange sweet potato rounds on a baking sheet with parchment paper & bake for 15 mins flipping halfway through

4. Dice the remaining raw vegetables and assemble

5. To assemble your breakfast bowls, start with your spinach and top with salad, roasted sweet potato rounds, cherry tomatoes, red onions, avocado, boiled eggs, and a generous spoonful of Summer Fresh Roasted Red Pepper Hummus. Garnish with fresh parsley.

Chicken Souvlaki wings

Ingredients

2 x Summer Fresh Extra Thick Tzatziki 227g

5 tbsp olive oil

3 Ib chicken wings

5 Tbsp lemon juice

5 tbs garlic (chopped)

5 tbs dijon mustard

Instructions

1. In a bowl combine dijon mustard, garlic, olive oil, oregano, & lemon juice. Pour marinade over the chicken wings & marinate minimum 1 hr.

2. Air fry the chicken wings for about 10-14 minutes or until golden.

3. Once the chicken wings are cooked. Place in a bowl and toss them with Summer Fresh Extra Thick Tzatziki! Divided into 5 containers.

Bean Medley Turkey Chili

Ingredients

4 x 300g Summer Fresh Bean Medley Salad 

6 tbsp olive oil

4 clove garlic, minced

2 onion, diced

5 tsp cumin

4 tsp chili powder

4 tsp cayenne

2 tsp smoked paprika

20 oz ground turkey

2 1/2 cup frozen corn

4 cup canned tomatoes diced

10 tbsp sour cream

12 tbsp cheddar cheese

Instructions

  1. In a large pot add the olive oil, garlic, onion and sauté for 2 mins on medium heat. Add spices and continue cooking for 1 minute.
  2. Add turkey and tomatoes, continue cooking for 15-20 mins.
  3. Add the Summer Fresh Bean Salad and continue cooking for 25 mins.
  4. Serve with a dollop of sour cream, and 2 tbsp of shredded cheddar on top. Divided into 5 containers and dinner is ready for the week!
