Seven Grain Stuffed Roasted Tomatoes

Ingredients

  • 300g Summer Fresh 3 Grain Sesame Ginger Salad
  • 2 fresh, ripe Roma tomatoes
  • 1 Tbsp olive oil
  • salt & pepper, to taste
  • parmesan cheese, to taste

Directions

  1. Cut each tomato in half so you have 4 halves. Scoop out the center of each half and discard. Brush the inside and outside of each tomato half with olive oil. Season with salt & pepper.
  2. Place tomato halves in a baking dish, and bake in a 375ºF (190ºC) oven for about 7 to 10 minutes.
  3. Remove from oven and allow to cool. Spoon an equal amount of Summer Fresh 3 Grain Sesame Ginger Salad
  4. into each tomato half. Sprinkle with parmesan cheese and serve.
