A healthy diet doesn’t have to be bland or boring, especially when you incorporate dips, hummus and salads from Summer Fresh! Be creative and vow to become a picture of health in 2010.

Tamarind Glazed Shrimp with Rice Noodles – A low fat dinner idea!

  • 200g package of rice noodles
  • 8 baby corn (cut in half)
  • 1 piece fresh ginger root
  • 1 lb raw, peeled jumbo shrimp
  • 227 g Summer Fresh Tamarind Sauce
  1. Brush jumbo shrimp with Summer Fresh Tamarind Sauce and place on indoor grill.
  2. Boil rice noodles as per the package directions. Ensure to keep noodles al dente.
  3. Heat olive oil in a deep wok and add cooked rice noodles, baby corn, shredded ginger root and shrimp.
  4. Cook contents for approx 5-8 minutes and serve. Sprinkle with toasted sesame seeds if desired.

“Creamy” Red Potato Salad – A delicious option for a high flavour lunch

  • 20 mini red potatoes (cut in half)
  • ½ cup chopped, white onion
  • 227 g Summer Fresh Tzatziki
  • Black ground pepper to taste
  1. Boil potatoes until cooked through.
  2. Drain and run under cool water for 30 seconds.
  3. Add Summer Fresh Tzatziki, onion and black pepper. Mix until thoroughly blended.
  4. Cover bowl and place in refrigerator for 1 hour.

Mediterranean Hummus Pizza – A quick meal idea for the whole family

  • pre-baked whole wheat pizza crust
  • 227 g Summer Fresh Roasted Red Pepper Hummus
  • 1 garlic clove, finely chopped
  • 1 cup shredded chicken
  • 1/2 cup sliced olives
  • 1 small jar artichoke hearts, drained and chopped
  • 1 small jar roasted red peppers, chopped
  • 1 cup reduced fat cheese (mozzarella and cheddar blend)
  1. Preheat oven to 450 degrees.
  2. Spread Summer Fresh Red Pepper Hummus over the crust.
  3. Sprinkle toppings on pizza, finishing with cheese.
  4. Bake on a pizza sheet or pizza stone for 10 minutes.

Grilled Eggplant and Hummus Panini – Add as many veggies as you like for extra vitamins

  • 1 (or desired amount) whole grain Panini bread(s)
  • 227 g Summer Fresh Roasted Garlic Hummus
  • 1 whole eggplant (sliced thin)
  • 1 whole zucchini (sliced thin)
  • 1 whole (purple) onion (sliced thin)
  1. Cook sliced eggplant, zucchini and onion on an indoor grill until golden brown.
  2. Place grilled vegetables onto one side of your cut Panini bread, and layer the other side with Summer Fresh Roasted Garlic Hummus
  3. Close and cook sandwich on grill for 2 minutes. Cut in half and serve.

Seven Grain Bruschetta Lettuce Wraps – All of the crunch without added carbohydrates

  • 2-3 whole Romaine lettuce leaves, washed and dried
  • 200 g Summer Fresh Seven Grain Salad
  • 227 g Summer Fresh Bruschetta

Spoon Summer Fresh Seven Grain Salad into Romaine lettuce leaves, top with Summer Fresh Bruschetta, wrap and eat.

Fruit kabobs with Sweet Dip – A unique snack for kids AND adults!

  • 1 bunch green, seedless grapes (washed)
  • 1 pint of strawberries (washed)
  • 1-2 bananas (peeled and cut into chunks)
  • 1 bag of stick style pretzel sticks
  • 1 package Summer Fresh Strawberry Vanilla Dip & Spread Mini
  • 1 package Summer Fresh Apple Cinnamon Dip & Spread Mini
  1. Skewer all fruit pieces with one pretzel rod and arrange on a plate.
  2. Open both Dip & Spread flavours from Summer Fresh to dip fruit in.
