Grilled Arugula Pizza

Simple, crispy, summery and healthy! Individual pizzas are absolutely divine for a quick grilled weeknight meal! Go sauce-free with this flatbread that’s covered in our roasted garlic hummus for a creamy base and topped with red onion, cheese and fresh arugula and roasted red pepper dip drizzle. Every bite is full of bright flavour, and you still get that classic thin crust crunch.

Ingredients:

2 Large Flat bread or Naan Bread
227g Summer Fresh Roasted Garlic Hummus
227g Summer Fresh Bruschetta
1/2 Cup Roasted Yellow peppers chopped
1/4 Cup Mozzarella shredded
1/4 Cup Feta crumbled
1/2 Cup Red onion grilled julienne
1/2 Cup Arugula

Directions:

1. Place salmon cubes, green pepper, shrimp and cherry tomato into mixing bowl. Add the olive, minced garlic, lemon juice and salt and pepper to taste and mix until well coated.

2. Place shrimp on skewer then green pepper, then salmon cube, then shrimp and finally cherry tomato. Repeat until all skewers are prepared

3. Placed skewers on medium high grill and gill on each sided turning every 3 min until shrimp and fish are cooked (6-8) or until fish reaches 70°C (158°F)

4. Remove skewers to serving tray finish with other half of lemon and serve on a bed of Greek Pasta Feta and SF Tatziki for dipping
